Homemade Mayo Recipe

Over 10 years ago, I learned how to make my own mayonnaise. Ever since learning, I will never go back! All it takes is for simple ingredients. Once you have the basics down you can customize it to pretty much any recipe you’re going to use it for. Once you try it, you’ll thank me. There’s a few things that I’ve learned that help my success first, I like to make in small batches so it gets used up faster. I make it in widemouth pint size jars so that my immersion blender fits in it perfectly. I find this helps less failure in the emulsification process. Room temperature eggs just seem to work better since your oil is also room temperature. The kind of salt you use doesn’t matter. I tend to use sea salt some recipes call for mustard sometimes I use it most times I don’t. I like to have a more bland base and add seasonings based on what I’m using it for at the moment. I typically use within a week always store within the refrigerator.. Ready for the recipe?

Homemade Mayonnaise

This recipe yields 1 cup

3/4 Light Flavored oil (I like to use avocado, but you can use olive oil or any other light oil)
1 Room temperature Egg (I use our farm eggs since they’re already room temperature)
1 Tablespoon Lemon Juice
​1/2 Teaspoon Salt
1 Teaspoon mustard (if you choose to use)

​Place all ingredients in a wide mouth pint jar. Place immersion blender at the bottom and turn on low until pretty much completely emulsified then you can move around at this point to get remaining ingredients blended. Now you’re done! Time to enjoy your efforts or place in the refrigerator for future use. Have fun and be sure to tell me how you like it and how you intend to use it. Well I know, it’s been a hot minute again. What’s new right?! But seriously I am working on getting better about posting. As I do, I really want to know what you want to hear about. The last couple of years have been a real roller coaster to say the least, my oldest son graduated college, my fiancé of nearly 7 years passed shortly after after my last post, I’ve had 2 grandbabies, gained and lost a business, gained some wonderful friends and found support in those I never imagined, lost those I thought supported me, as a result of all the ups and downs it’s been hard to figure out where to start again. Until I get some direction from my readers, I’ll probably just go with whatever is on my mind at the moment so I might be all over the place but I figured the best way to start is to just start. I look forward to sharing our farm adventures with you all soon. Please let me know what you would like to read about. ~ Peace, Love & Light
